His grandfather established the farm using seeds collected from wild coffee trees in the nearby Coche Forest, and many of those original heirloom trees still produce today.\u003c\/p\u003e\n\u003cp\u003eRipe cherries are hand-picked, sorted, and rested overnight before being depulped and wet-fermented for around 24 hours.
