This Gesha is vibrant and intricate, defined by its elegant floral character and bright citrus clarity.
The coffee undergoes an advanced double anaerobic fermentation designed to elevate its natural sweetness and aromatic precision. After ozone disinfection and careful cherry selection, the coffee is pulped and placed in bioreactors for a 48-hour anaerobic fermentation, divided into two carefully controlled stages. Once complete, it is washed with hot water at 70°C to preserve and lock in its developed flavours, then dried under controlled conditions at 38°C for approximately 48 hours.
Expect notes of violet, tangerine, and a soft, fruity sweetness. A bright, citrus-driven acidity is paired with a clean, silky mouthfeel, finishing long, elegant, and vividly floral.
