This decaf Castillo comes from El Paraiso, grown by Samuel Diego Bermudez at 1.960 masl. 

The lot is semi-washed with Saccharomyces cerevisiae fermentation before decaffeination using sugarcane-derived ethyl acetate. This method preserves complexity and sweetness, producing a clean cup with notes of raspberries, peach, and key lime, complemented by medium body and brilliant acidity. The result is a vibrant, delicately nuanced decaf that retains the clarity and character of its origin.
