Colombia "Golden Hour" Advanced Anaerobic Washed Thermal Shock Castillo - September

Sale price360 kr

International Feature Roaster: September

Produced by Alex Bermudez at Finca El Paraíso in Cauca, Colombia, this Castillo is grown at 1,930 masl, and showcases the Bermudez family’s precision-driven approach to experimental processing, using specialised bioreactors to control fermentation conditions and develop distinctive flavour profiles.

The ripe cherries undergo 72 hours of anaerobic fermentation in water before being pulped and demucilaginated. A culture medium developed from the pulp and mucilage is then introduced for a further 36 hours, followed by thermal shock and controlled drying in a dehumidifier.

Expect an intensely sweet and creamy cup with notes of juicy peaches, creamy fruit smoothie and sweet lychee.
