Finca Los Nogales is a third-generation farm in Huila — Cup of Excellence Colombia 2005 winners — now run by the Hernández siblings, who blend family tradition with an on-site fermentation lab. This Typica undergoes a 90-hour mossto anaerobic fermentation before an on-farm EA decaffeination process developed by Angie Hernández using ethyl acetate derived from the farm's own cherry skins.
Expect anything but ordinary from this decaf: bubble gum and lavender open up into sour cherry, strawberry, and dried plum, closing with a deep molasses sweetness.
