Ripe cherries undergo a 48-hour anaerobic fermentation before pulping and a further 48-hour fermentation with mucilage, mosto, and selected yeasts under carefully controlled conditions. A final thermal shock halts fermentation, preserving a strikingly clean and expressive cup.

Expect a verry expressive cup bustring with notes of bright meyer lemon, complex lime leaf, and black tea.
