Colombia "Villa Pastora" Washed Yeast Inoculated Ombligon - Sango

Founded by Pastora Anacona in the 1980s, Villa Pastora is a family-run farm in Palestina, Huila, now led by Yulieth Mora. Growing coffee at around 1,680 masl, Yulieth has developed the farm into a community hub, creating local employment and sharing post-harvest knowledge with neighbouring producers.

For this lot, the coffee undergoes a washed process with an inoculated strain of Saccharomyces cerevisiae yeast to extend mucilage fermentation before the parchment is dried on patios for 15 days.

Expect a sweet cup with lingering notes of apricot, floral chamomile, and bright pink grapefruit.
