White Honey is a remarkable Prodigy lot from Sebastián Ramírez’s El Placer farm in Calarcá, Quindío. This Geisha variety undergoes a meticulous white honey process: 95% of cherries are fully ripe, and after harvesting, they’re fermented anaerobically with CO₂ for 48 hours, gently pre-dried under canopy, submerged in oxygenated water, and then slowly dried for up to 25 days.
Expect a stunningly complex cup layered with jasmine, white peach, lemongrass, and honeysuckle. The profile is floral and refined, with a silky, round body and light to medium acidity.
