This coffee is produced by Ricardo Vargas and his wife Miriam Vallejo at Don Vallejito in Pichincha, near Quito at 1,523 masl. Originally trained as a food engineer, Ricardo was inspired by his father-in-law’s belief in specialty coffee and started the farm in 2014 with a focus on precision, quality, and long-term sustainability.

This washed Typica Mejorado is processed with close attention to fermentation and drying, with temperature and Brix levels carefully monitored throughout.

Expect a clear and elegant cup with notes of sweet apricots, floral hibiscus and juicy blood orange.
