This Gesha is elegant and composed, defined by its delicate florals and remarkable clarity.
The coffee follows a traditional washed process. After harvesting, cherries are stabilized for 18–24 hours to equalize temperature and enhance aromatic potential before pulping. The beans are then fermented with mucilage in tanks for up to 24 hours, a controlled step that develops flavour while ensuring clarity. Following fermentation, the coffee is cold washed to halt microbial activity and remove any remaining residues. It is then slowly dried on raised beds in a greenhouse.
Expect floral notes of jasmine, and lavender, followed by a delicate pineapple sweetness.
