This Advanced Washed lot follows selective picking and rigorous sorting, then undergoes a controlled, oxygen-limited fermentation with close monitoring of pH and temperature. Slow, even drying preserves clarity and sweetness, resulting in a vibrant, fruit-forward cup with silky texture and refined structure.
Expect candy-gummy brightness and watermelon juiciness, lifted by delicate lavender and lilac aromatics, and a silky yoghurt-like (lactic) mouthfeel.
