Colombia "La Dinastia" Anaerobic Washed Marageisha - Mellow

This Marageisha comes from La Dinastía in San Adolfo, Huila, where producer Wilder Lazo cultivates the variety at 1.480–1.550 masl.

After pulping, the coffee undergoes a 90-hour anaerobic chilled fermentation in blue tanks cooled continuously by spring water at around 16°C. The controlled low temperature allows fermentation to develop slowly without introducing heavy or overly funky flavours.

Expect a smooth and expressive cup, tasting like thyme, blackcurrants with an aroma bursting with lemongrass.
