This Sudan Rume comes from Julio Quiceno at Finca La Riviera in Risaralda, Colombia, where the variety has been carefully cultivated for over 11 years. Grown high Andes, the farm benefits from young, nutrient-rich soils and a wide thermal range that slows cherry maturation and builds complexity. Julio leads Café Uba’s farms with a deep commitment to quality and innovation, combining meticulous farming with experimental processing to highlight rare varieties like this Ethiopian/Sudanese heirloom.
This microlot was fermented in a bioreactor using Kazachstania humilis yeast under tightly controlled conditions, including temperature, pH, pressure, and nitrogen enrichment to enhance aromatic clarity. After a 24-hour pre-fermentation, the cherries were depulped, fermented for an additional 36 hours, then washed and dried in a dehumidifier to precise moisture levels.
Expect a sweet and strikingly distinct cup with notes of apricots and physalis, layered stone-fruit acidity, and aromatic citrus-herbal florality reminiscent of lemon verbena.
