Costa Rica "Vista Paraíso" Double Anoxic Natural Java - Scenery
International Feature Roaster: Scenery
On the Vista Paraíso plot in Buena Vista de Rivas, the Alvarado Fonseca family grows Java at around 1,800 masl. The coffee is processed at Corazón de Jesús mill. Known for its experimental processing and award-winning lots, the mill brings a more fermentation-driven approach to this year’s Java, resulting in an intensely sweet and expressive profile.
Ripe cherries first undergo 3–5 days of anoxic fermentation in shaded, sealed plastic barrels. They are then dried on raised beds for 3–5 days to reduce moisture before returning to the barrels for a second, slower anoxic fermentation lasting 5–7 days. Finally, the raisin-like cherries are dried on mesh-screen patios to the desired moisture level.
Expect a ultra-sweet and boozey cup with notes of marshmallow, sweet and sour Tutti Frutti candy and a winey finish.
