This honey-processed Pacamara comes from Los Pirineos, a 150-hectare farm on the slopes of the Tecapa Volcano in Usulután, El Salvador. Today the farm is managed by Diego Baraona, who continues the legacy of his father, Gilberto Baraona, one of El Salvador's most celebrated producers with multiple Cup of Excellence top-10 finishes.
Ripe cherries are hand-picked, carefully sorted, and depulped before being dried as honey process coffee with the mucilage left intact.
Expect an intense and sweet cup with notes of super ripe stone fruits, cacao nibs, and a winey aftertaste.
