This high-altitude Ethiopian coffee comes from Banko Gotiti in Yirgacheffe, where heirloom varieties are cultivated at 2.100–2.300 masl.
The coffee undergoes a refined dry-fermented washed process inspired by the Kenyan 72-hour method and Yellow Honey processing. Ripe cherries are floated and depulped on the same day, then dry-fermented for 72 hours with gentle rinsing when needed to control fermentation. After washing, the parchment is slowly dried in a single layer on raised African beds
Expect a juicy and floral cup, tasting like candied lemon, hibiscus tea with a floral aroma.
