

Ethiopia "Echemo" Washed Ethiopian Heirloom - Tim Wendelboe

Khalid Shifa is a third-generation coffee producer and owner of the 35-hectare Echemo farm in Goma, Jimma, southwestern Ethiopia. His grandfather established the farm using seeds collected from wild coffee trees in the nearby Coche Forest, and many of those original heirloom trees still produce today.
Ripe cherries are hand-picked, sorted, and rested overnight before being depulped and wet-fermented for around 24 hours. After washing, the coffee is slowly dried on shaded raised beds for 12–14 days, with each day's harvest kept separate and stored in GrainPro bags before milling and vacuum packing.
Expect a sweet and lingering cup with intense notes of stone fruits, delicate white tea, and aromatic florals.
