★ Panama "Santos Café Lot5 " Dark Room Natural Gesha - Goût & Co
International Feature Roaster: Goût & Co
This Geisha comes from La Mimada, a special plot within Santos Café in Santa Clara, Chiriquí, where the Lezcano family cultivates coffee under native shade trees on volcanic soils at around 1,400 masl. The farm’s cool climate and dense tree cover help create the sweet, clean, and vibrant cup profiles for which the estate is known.
The coffee undergoes a controlled dark-room natural process, with whole cherries fermented for four days at 23°C before being slowly dried in complete darkness for more than 38 days.
Expect an expressive flavour profile of pink rose, shine muscat, nectarine, and rosella tea.
