Peru "Roiber Becerra" Anaerobic Extended Fermentation Natural Gesha - Swerl
Feature Roaster: Swerl
Roiber Becerra is part of a new generation of quality-focused coffee producers in Nuevo Belén, Amazonas, where he runs Finca Morales with his family. Growing Geisha at 1,700–1,900 masl, Roiber places great emphasis on soil health, thoughtful farm management, and careful processing.
The ripe cherries undergo around 72 hours of anaerobic fermentation in sealed plastic tanks, with the duration adjusted according to weather conditions. They are then dried slowly in solar dryers for at least 30 days, with regular monitoring and repositioning until they reach 11–11.5% moisture.
Expect a floral and complex cup, reminiscent of fresh honey, raspberry jam and jasmine.
