This Pink Bourbon is produced by Diego Parra in Pitalito at 1,700 masl. Working on his 14-hectare farm in southern Huila, Diego brings a high level of care and precision to his work, resulting in coffees that are exceptionally clean and expressive of both variety and terroir.
This Pink Bourbon, a variety known for its clarity and sweetness, is carefully handpicked, floated, and rested in cherry overnight before depulping. The coffee is then dry-fermented for 36 hours, washed, and dried on raised beds to 10.5% moisture.
Expect a bright and refined cup with notes of candied lemon, juicy red currants and sweet hibiscus.
