Ripe cherries undergo a five day fermentation in their own sugars, enhanced by a touch of pre-fermented yeast from the same variety - a process that builds sweetness, preserves terroir, and adds depth and nuance to the cup. Followed by a sun-drying stage of over 15 days.
Expect a vibrant and expressive cup with flavours of bright citrus, delicate lavender and a refreshing hint of lemongrass.
