

Colombia "Henry Bonilla" Natural Sudan Rume - Hydrangea
This lot comes from Finca La Florida in El Pital, Huila, produced by Henry Bonilla at 1,850 masl and planted with Sudan Rume.
After harvest, the cherries undergo 72 hours of oxidation followed by 24 hours of fermentation in sealed blue containers, a method designed to build aromatic depth and structure. The coffee is then slowly dried over 20 days, allowing sugars and acids to settle into balance, resulting in an elegant, floral, and deeply layered cup.
Expect an expressive cup with notes of juicy pomegranate, delicate chamomile, and sweet raspberry compote.
