This Sidra is vibrant and expressive, defined by its layered fruit character, floral elegance, and remarkable sweetness.
The coffee undergoes an advanced double anaerobic fermentation with yeast inoculation, designed to amplify its aromatic complexity and precision. After sterilization, whole cherries are placed in bioreactors for two carefully controlled fermentation stages, where temperature management and selected yeast enhance both clarity and balance. The process is completed with slow, controlled drying in ecological drying chambers, ensuring stability and a clean, consistent final cup.
Expect notes of raspberries, and ripe cherries, lifted by a lingering honey finish.
