This Colombia variety is silky and bright, defined by its pronounced floral character, juicy sweetness, and smooth mouthfeel.
The coffee undergoes a meticulous multi-stage fermentation designed to amplify its natural sugars and aromatic complexity. After sterilization, whole cherries are placed in bioreactors for an initial 60-hour fermentation. Once pulped, the coffee enters a second anaerobic fermentation for 48 hours, with selected mosto introduced. It is then fully washed and carefully dried at 30°C for approximately 45 hours.
Expect notes of ripe strawberry, soft buttercream, and a touch of orange zest. A bright, pleasant acidity is paired with a smooth, silky mouthfeel, finishing long, juicy, and delicately sweet.
