This Laurina, also known as Bourbon Pointu, is naturally low in caffeine, it offers a light and elegant cup where clarity and sweetness come together in a beautifully refined way.
The coffee undergoes an extended 6-day aerobic fermentation in whole cherry, a slow and carefully monitored process that enhances its complexity and structure. After that, the cherries are dried slowly on raised beds for approximately 30 days under controlled conditions until reaching an ideal moisture level of 10.5%. The coffee is then rested in a stabilization room, allowing the flavours to settle and fully express this lot’s unique character.
Expect notes of raspberry, lime, and a champagne-like sparkle.
