This San Isidro 39 comes from Las Lajas in Costa Rica's Central Valley, where Francisca and Oscar Chacón have spent decades pioneering organic farming and innovative processing methods. 

The coffee is processed using Las Lajas' signature Black Diamond natural method. Fully ripe cherries, with Brix levels above 22%, are carefully selected, sorted, and slowly dried in a greenhouse for 22–30 days before resting for at least 60 days in a temperature-controlled warehouse. This extended approach enhances sweetness, complexity, and clarity, resulting in a vibrant and beautifully refined cup.

Expect a layered, bold and complex cup, tasting like milk chocolate, dried sweet prunes and a syrupy texture.
