High in the mountains of Huehuetenango, where cool nights and rugged terrain shape some of Guatemala's most celebrated coffees, Finca Paya is owned by second-generation producer Nery Pablo.
This washed blend of Caturra and Bourbon is pulped shortly after harvest, fermented slowly for 32 hours in the cool mountain climate, then washed and dried on patios for up to six days with careful turning throughout.
Expect sweet pastry-aromatics reminiscent of pear and apple danish with toasted hazelnuts, bold apple acidity, honeyed sweetness, and a sweet vanilla custard finish.
