Honduras "Heber Ávila" Washed Sidra - Subtext Coffee

Sale price290 kr

International Feature Roaster: Subtext Coffee

This elegant Sidra comes from Finca Las Moras in Guajiquiro, La Paz, where third-generation producer Heber Ávila farms at 1,600–1,800 masl. Working across 4.2 hectares, Heber combines traditional family knowledge with sustainable farming practices.

The cherries are hand-picked and depulped on the day of harvest, then fermented for 10–12 hours in concrete tanks before being washed. The parchment is dried slowly on raised beds in thin layers, turned every 30–40 minutes for even drying, and typically takes up to 14 days to reach the desired moisture level.

Expect juicy and complex notes of hibiscus, raspberries, and stewed fruit.
