

TANAT Ombligon | xPods for xBloom
xBloom Special Release: TANAT Coffee
Grown by Nestor Lasso at El Diviso in Pitalito, Huila, this microlot comes from elevations above 1,750 metres. Ombligon is a rare Colombian Arabica named after the Spanish word for “belly button,” a reference to the bean’s unusual shape. Its exact genetic origin remains unclear, though it is believed to have links to Ethiopian heirloom coffee and traits of native Colombian varieties.
Fully ripe cherries undergo an extended oxidation stage, followed by anaerobic fermentation with recirculated mosto, the sweet juice released by the coffee fruit. A final thermal shock helps preserve its aromatics. The result is intensely fruity and juicy, with strawberry and raspberry jam balanced by delicate peach sweetness.
