Edilberto Vergara and Nubia Ayure founded Finca Las Flores in 1990 in Acevedo, Huila, Colombia. Their son Jhoan, current process manager after SENA training, transformed the farm into innovation laboratory introducing exotic varieties: Java, Pink Bourbon, Maracaturra, Castillo, Tabi and Bourbon Sidra. Winner Master of Coffee 2019 with Pink Bourbon, represented Colombia in South Korea, positioning the farm on specialty coffee world map through experimental fermentation techniques and microbiological control.
The process is experimental natural: initial cherry oxidation (12h), submerged fermentation in controlled environment (48h), thermal shock at 50°C to stabilize and fix aromatic compounds, second oxidation (24h), mechanical drying (24h) and greenhouse (15 days) until 10.4% final humidity.
Expect notes of cacao nibs, lychee, and pineapple with a velvety texture and bright acidity.
