Diego Robelo owns Aquiares, Costa Rica's largest single-block plantation, located on Turrialba volcano (1,400 masl). With direct trade eliminating intermediaries and direct containers to Barcelona, he cultivates Centroamericano variety (F1 hybrid Sarchimor x Sudan Rumé), rust-resistant and high-yielding.
This process is anaerobic natural: mature cherries, fermentation in sealed barrels with must until pH 4.3 (1-2 days), sun drying on ceramic floor (2 days) and raised beds (10-15 days) at 28-40°C, mechanically finished in Guardiola (1 day). Stored in parchment with GrainPro 6-8 weeks.
Expect a complex cup with notes of cherries, chocolate, blackberry jam, and a vinous acidity.
