Hacienda San Isidro Labrador is a multi–Cup of Excellence–winning estate in Dota, Tarrazú, led by Johel Monge and his son Mathias, whose family has been growing coffee in the region for over a century. Today, HSIL is known for its meticulous farming, high-altitude plots, and a focused selection of varieties including Gesha, Typica, and small, carefully managed Bourbon lots.
This Bourbon is processed as a honey, allowing part of the mucilage to remain during drying to enhance sweetness while preserving clarity. The result is a delicate, transparent cup that highlights the refined potential of Bourbon when grown and processed with precision in Costa Rica’s highlands.
Expect a delicate, transparent cup with notes of white spring cherries followed by a subtle honeysuckle florality, and a baseline of orange brightness.
