After depulping, cherries undergo initial fermentation for 48 hours, then a second anaerobic phase with added indigenous yeast before washing and drying on raised beds, creating a complex, layered profile that pushes Kenyan classics into experimental territory while honoring the cooperative's community-driven quality focus.
Expect vibrant notes of rhubarb, juicy grapefruit, and sweet dark chocolate, with a sparkling acidity and syrupy body that lingers elegantly.
