Hipólito Acuña manages the family farm, focusing on quality-driven production with partnerships starting in 2025, including experimental processing to enhance flavors.
This lot features the Geisha variety, prized for its complex floral and fruit profiles, though the farm also grows Catuai and others. The CM Natural Amber method involves depulping cherries, macerating them in sealed tanks with CO2 to promote anaerobic fermentation, then drying naturally to an amber hue, resulting in intense sweetness and clarity.
