Mexico "Finca Chelin" Hydro-Natural Washed Gesha - Still
Feature Roaster: Still
Enrique López has made Finca Chelín in Oaxaca one of Mexico’s most exciting farms through a thoughtful approach to variety and processing. This Gesha is grown at 1.700 m.a.s.l. and reflects his preference for small, deliberate adjustments that add depth without overwhelming the character of the coffee. The result is an expressive yet composed cup, with layered florals and juicy sweetness.
Ripe cherries are rested and briefly dried before being soaked overnight in water, then depulped and thoroughly washed. The parchment is dried slowly under a combination of direct sun and shade nets, producing a remarkably clean profile that sits between natural and washed processing.
Expect a delicate and floral cup with notes of orange blossom, lemon, and green grape.
