Here, perfectly ripe cherries (21–24 °Brix) are pulped and fermented with added cascara under CO₂, enhancing the coffee’s aromatic depth without overpowering its natural clarity. After over 50 hours of anaerobic fermentation, the lot is fully washed and meticulously shade-dried on raised beds for over 10 days.
