Echo is a groundbreaking release from Jamison Savage’s Finca Deborah in Volcán, Panama—an exclusive Gesha crafted through cascara-infused carbonic maceration. Here, perfectly ripe cherries (21–24 °Brix) are pulped and fermented with added cascara under CO₂, enhancing the coffee’s aromatic depth without overpowering its natural clarity. After over 50 hours of anaerobic fermentation, the lot is fully washed and meticulously shade-dried on raised beds for over 10 days.

This coffee stands as a testament to Jamison Savage’s relentless spirit for innovation. Used by all top three baristas at the 2024 World Barista Championship, this coffee marks a new milestone for cascara-infusion in specialty processing, available in extremely limited quantity and crafted for those seeking the absolute pinnacle of flavour and precision.

Expect a crystalline cup with extraordinary complexity: the first sip offers vibrant notes of cabernet grape, lychee, and delicate honeysuckle. Floral highlights of hibiscus weave through a red berry and nectarine sweetness, wrapped in a juicy, silky texture.
