Pepe Jijon’s Sidra from Finca Soledad in Imbabura, Ecuador, is a testament to innovation and nature’s artistry. Grown at 1500m, this washed Sidra undergoes a careful 24-hour cherry fermentation, followed by a 24-hour mucilage fermentation, and then slow drying in a dark room for 30 days.
Expect a vibrant, clean cup with notes of mimosa, stone fruits, and a gentle touch of clove. The profile is elegant, floral, and layered, with a silky body and balanced acidity.
