Juanachute Red Honey is a red honey-processed lot blending Caturra and Catuai varieties from Luis Anastasio Castro's pioneering micromill in Tarrazú, Costa Rica, at 1,800m. The Castro family, with generations of expertise, hand-picks ripe cherries, depulps them to leave a sticky mucilage layer, and dries on raised beds for 14–21 days under careful monitoring, fostering the lot's signature balance of sweetness and clarity from the region's fertile volcanic soils and stable highland climate.
Expect a lively, fruit-toned cup with milk chocolate, raspberry, orange, and black currant — bright yet rounded, with juicy acidity and deep sweetness in balance.
