This “Hybrid Carbonic Maceration Washed” lot merges the juicy, wild aromatics of carbonic maceration with the refined structure and clarity of a washed process—a method perfected at Deborah through years of experimental precision.
Cherries are picked at peak ripeness (21–24°Brix), then whole-fruit fermented under CO₂ for over 50 hours, developing vivid aromatics and complexity. Midway, the cherries are de-fruited and washed, then shade-dried with meticulous care for a balanced, expressive finish. The result is a cup with both exceptional fruit clarity and a luxuriously clean structure.
Expect juicy peach and golden apricot leading the profile, alongside sparkling, champagne-like acidity and delicate jasmine florals.
