At Hacienda La Papaya in Ecuador’s Saraguro Formation, Juan Peña has become known for precision and patience. Farming between 1,800 and 2,200 masl, he has spent years refining Typica Mejorado, a distinctive Ecuadorian variety valued for its balance, sweetness, and clarity, under cool Andean nights and steady equatorial light.
This lot is fully washed with a 15-hour controlled fermentation, then slowly dried in solar rooms with sensor monitoring.
Expect a clean composed cup showing honeyed sweetness, lime and apple brightness, soft rose florals, and a silky texture with lively acidity.
